Day 1

Day one is done. It went very well. Here is what I ate.

I had 2 cups of coffee and a few walnuts before eating breakfast.

Breakfast

Egg White Scramble and Avocado    Serves 1
4 egg whites (you can use yolks if you like, I just don't care for them)
2 teaspoons coconut oil
Small handful of kale chopped
1/4 to 1/2 small zucchini chopped
2 Tablespoons of purple onion chopped
1 green onion chopped
Salt and pepper to taste
1 Avocado sliced

Heat coconut oil in non stick pan, once melted add kale, zucchini, and purple onion. Saute for a few minutes, then add egg white to the top. When eggs are almost done, add green onions and salt and pepper. Scramble until done. Slice up avocado.

 

Lunch

I made this soup for dinner last night. I usually make a lot so I can have some for lunch.

 Chicken and Vegetable Soup    Serves 4
 1 tbsp or so of ghee
1 lb chicken
3/4 large onion chopped
6 cloves garlic chopped
1 medium sweet potato cubed
1 medium zucchini chopped
2 carrots chopped
4 pieces of celery chopped (save some leaves for seasoning)
Handful of Kale
1 box of chicken stock
Water
Tbsp of onion and garlic powder
1/2 tablespoon basil
1 tbsp of a mixed herb seasoning
1/2 tsp red pepper flakes-optional
Pinch of oregano
Salt and pepper to taste

Heat ghee in large stock pot, once melted add chicken. Cook chicken until done, add onion, garlic, zucchini, carrots, and celery. Saute until onions are translucent. Add chicken stock and how ever much water you want to add. I usually just fill the stock box up 3/4 of the way and use that much water. Add Sweet potatoes. Turn to high until it starts to boil, the let it simmer for 30 minutes or longer. While simmering add celery leaves, onion and garlic powder, basil, herbal seasoning, red pepper flakes, oregano, and pepper. Salt to your taste.

 


Dinner

Luckily my vegetable slicer came in the mail today, because I have been excited to try zucchini pasta.  It is super simple. The directions are mostly in Japanese, but the pictures make it easy to understand. Here is the slicer I bought.  


Zucchini Pasta with Meat Sauce    Serves 2

Pasta

4 medium zucchinis sliced
Boil zucchini pasta for 1 to 2 minutes, strain and serve. Be sure not to boil too long or it will become mushy.

 
Sauce

1 lb grass fed beef
Half a medium onion chopped
5 garlic cloveschopped
1 jar of spaghetti sauce
tsp garlic powder
tsp onion powder
tsp paprika
tsp basil
tsp black pepper
pinch of oregano

While browning hamburger add chopped onion and garlic. Once browned, drain excess fat. Add Spaghetti sauce, and all the spices. Simmer on med high for about 10 minutes.


I also had a big salad and a peach to go with my dinner. :)

Hello World! Today I started a Paleo diet. It's not a fad diet, or a lose wait quick diet, it's more like a way of life. Our bodies crave good nutritious food, so for 30 days I will only eat Paleo that is Whole30 approved. After the 30 days I want to continue eating Paleo, because I know my body will feel so much better. I have some auto immune issues as well as Lyme disease, and some of the things I ate prior to today are not good on my skin, joints, and other parts of my body. I'll also post the recipes of what I eat everyday. I'm really excited! This website has really helped me out on making this transition. Check it out if you are interested.
